Organic and biodynamic viticulture.
Own vineyards located in Alt Penedès, at 500m above sea level. From these vineyards we elaborate well-structured wines with good alcoholic levels. We apply fertilizer, always organic, and only every four years. Partial carbonic maceration of one third of the grapes. Conventional maceration of the remainder to extract the varietal notes of the Pinot Noir. Ageing in oak barrels during 6 to 8 months. This wine will improve in the bottle during its first few years of life.
Look: Cherry colour of medium-high intensity with light tile shades at the meniscus due to the ageing.
Smell: Firstly we can appreciate tinges of liquorice and toasted (coffee and cacao). Afterwards comes the violet perfume with a peculiar cherry aroma. The new oak barrels aromas are dominant, bringing new aromas that remind us of leather. Very elegant.
Taste: The tannin fruit combines very well with the acidity and the alcohol rounds the ensemble. The fine grain of the French oak barrel gives it elegance. The aftertaste is long, with fruit and species hints.
Perfect with any kind of meats and cured cheeses.
